 Buckwheats protein...

Looking into nutrition you can often stumble across the odd new fact..well here's a quick fact about buckwheat. Buckwheat is 18% protein, which isn't so shocking, but the biological value is over 90% (high fibre & tannin levels may lower that to the 80's or slightly lower), this is due to the all essential amino acids, especially lysine, threonine, tryptophan, and the sulphur-containing amino acids.
Buckwheat isn't a grain it's a flowering plant & so doesn't have some of the allergy issues of other grains & isn't related to wheat (silly name then, I know):

I hadn't really thought about buckwheat as a food in my diet really, nor in anyone elses (except those that couldn't have wheat), now I might have to think about it. I believe that Infinity foods (a big health food store in my town) sells stuff like fresh baked buckwheat loaves & stuff, so I might have to experiment a bit & give buckwheat stuff a go as I seem to have missed this crop out of my diet for no good reason.

I can't have wheat or oats, but I think everyone should try buckwheat. I make it into a porridge with basmati rice and quinoa, with stevia, rice milk and cinnamon. It's lower GI than oat porridge and very sustaining. I've tried buckwheat bread, but prefer rye because it is less bitter. Buckwheat pancakes are very tasty. I have them with golden syrup, yum! Buckwheat is also alkalising (not as an important dietary goal for vegans though, haha).

I've actually found some rather nice buckwheat pasta which I use in most pasta dishes lately. It'd pretty good.
